The 2015 Appellations One of Sixteen Diamond Mountain Cabernet Sauvignon immediately fills our noses with vanilla, caramel, toast and coffee – the hallmark signatures of the French oak program. The fruit burst through this oak with notes of blueberry and blackberry, especially as you take your first sip, carrying this wine all the way to its finish. When you return to start over again with another sip, the fruit and oak swirl together in a perfusion of symbiotic flavors. The terroir of Diamond Mountain is volcanic and the soils are shallow. Subsequently, the vines are held in check. The resulting wine of this hillside vineyard has a character unique to this site. Its texture has minerality. The tannins are whetting and not drying to the mouthfeel. The fruit is blue and not red. As we crafted this 2015 Diamond Mountain Cabernet Sauvignon, we respected its character and complemented its nature. This wine will age gracefully over the next 20 years.
